Cheesy

Kevin keeps telling me to stop saying "I'm JUST a stay at home mom". Isn't that sweet? He thinks that I am more than staying at home. Truth is I'm bored. We haven't figured out our routine around here and so we are just wandering around. We do the laundry, we weed the flower beds, we watch Cars over and over again. Today in the boredom, I decided to make cheese crackers. Stella doesn't like them, Ruby does. They were easy, easier than I thought they would be.

Cheese Crackers
350 Degrees for 15 Minutes
8 Ounces Sharp Cheddar Cheese, shredded
4 TB Butter, cut up
1 tsp Salt
1 Cup Flour
2 TB Water
Pulse the salt, cheese, butter and flour until its a course sand.
Add the water until it forms a ball. Chill the dough for about 20 minutes.
Roll it out thin, like a pie crust.

At first, I cut them up with a cookie cutter. Then I realized that was tedious. So I cut them up in squares. Way easier.
But round ones look cute...
Bake at 350 degrees for 15-16 minutes. The longer you bake them the crispier they are. I broiled the tops so they were crunchy all around and chewy in the center.

Aren't they pretty?
Maybe soon we will find our routine. When we do, I know whatever it is we figure out, baking just for the fun of it will be a part of it.
love love
