Pumpkin Cookies

I have an obsession with pumpkin. Like a real deal obsession with all the amazing ways you can cook it. I tend to bake with it, and if I could find more pumpkin at the store I would. But apparently its all gone. I am praying not forever. How will I be able to eat pumpkin bagels from Einsteins? (My most favorite thing). Deb had some pumpkin in her overflowing pantry, and well, I stole it. I indulged in some cookies, and I might have eaten more than a dozen, the first night.
Here is the basic, classic pumpkin cookie Recipe:
 Pumpkin Cookies
3/4 C Shortening
1 C Sugar
1 egg
1 C pumpkin
1 tsp Vanilla
1/2 tsp Lemon
2 C Flour
4 tsp Baking Powder
1 tsp Cinnamon
1 tsp Nutmeg
1/4 tsp Ginger
Chocolate Chips

Makes 2 dozen
Bake at 350 degrees for 15 minutes.


** I rarely measure, so everything is a guesstimate. sorry.
